if you want something long and involved try Tchaikovsky's 6th symphony (the pathetic).
or give rachmaninoff's 'rhapsody on a theme of paganini' a shot. also his 2nd piano concerto 2nd movement is fantastic. listen closely and you will hear the seed of a relatively recent pop hit.

I recommend Sergei Prokofiev, Violin Concerto No 1 in D. He's kind of an angry Russian composer (Russian classical music is always fun) and this one was great fun to play... Prokofiev is complicated and pretty hardcore as far as orchestral music goes, seems like your type of thing.
